I'm finding a lot of inspiration recently from those that have pioneered the new wave of food. It's all place based. Taking the knowledge and ingredients (the gifts) of where you are and using these as the building blocks for what you are doing. Food seems a bit further ahead with this idea than other areas in our society.
Alex Atala, a Brazilian punk rocker turned chef, had a great quote: "Before we start to use other countries flavors we need to figure out what we have first." Too often we don't look close enough to find and celebrate the beauty in our own backyard. The pasture always looks greener elsewhere though in reality it rarely is.
