Scotch whiskey is created by taking fresh Scottish water and adding flavors of the land where it is being distilled. It's smoked with different things. Aged in different kinds of containers. All of which impart its unique taste for that region at that time. Scotch can be described as drinking the Scottish land.
Grounding what you're doing in place is powerful. Trouble shooting or creating new solutions by putting together different resources, knowledge, traditions of a certain place is how we'll make things that are sustainable from a people and environmental perspective. The answer to the question we are seeking is often right under our nose in our own backyard.
