As we've been enjoying all of the amazing food in Italy we've been talking about what we want to re-create at home. Our challenge to ourselves is not to simply just use these ingredients at home, but to take the principles of the food culture here and apply it back in Canada.
Italian food is and has always been about using fresh regional and seasonal ingredients. They are fortunate to live in such a bountiful place. I'm looking forward to returning and expanding my knowledge of growing things on the west coast of Canada. Gaining a further understanding of place through the process as well.
